Instructions

🔥 Stove top:

  1. Soak shiitake mushrooms for 1-3 hrs (keep the water); Lion's mane mushrooms for 30 mins, squeeze, trim stems. Repeat till the water is clear, then tear to bite sizes.
  2. Wash dates, halve and deseed.
  3. Rinse and soak all remaining ingredients for 20 mins, then drain.
  4. Add all the ingredients to the pot with 1.5L cold water.
  5. Boil for 10 mins, then simmer on medium-low for 2 hours.
  6. Adjust seasoning to taste and serve hot!

🏃Instant Pot:

  1. Follow steps 1-2 from the Stove Top method.
  2. Rinse all remaining ingredients, then drain.
  3. Add all the ingredients to the pot with 1.2L cold water.
  4. High pressure cook for 20 mins, natural release.
  5. Sauté mode: simmer uncovered for 10-15 mins.
  6. Adjust seasoning to taste and serve hot!

Optional:

- Vegan: Corns, Red Dates+Cashews +Walnuts¹ (100-200g)
- Meat: Blanched lean pork, pork rib or lean chicken² (300-500g)
